Vegan Mushroom En-chill-adas

Vegg out with the En-chill-adas, and make any night a fiesty fiesta; even if it just involves you  in a sombrero watching your latest netflix video.

Ingredients:

-1 red onion sliced thin

-1 medium potato; julienne

-1 jalapeno

-4 cloves garlic; minced

-2 cups baby bella mushrooms

-1 can diced tomatoes

-1 bell pepper, any color; diced

-1 package tortillas, there are all sorts out there, I use spelt.

*Preheat your oven to 420 degrees*

For the filling:

Combine the first 4 ingredients in a bit of coconut oil and cook over medium heat until the onion become translucent.  Add the mushrooms and the tomatoes and cook until the mushrooms become soft (about half way, as these ingredients will also cook in the oven). Add bell pepper.

Warm the tortillas in the microwave for 15 seconds covered with a moist paper towels. Rub the tortillas with salsa verde, sensually, this is a feisty fiesta after all. If you feel so inclined, rub yourself with salsa verde as well, but remember to wash your hands after doing so. Then give the pan some love’n to by lining it with a scoop of salsa verde.

Spoon the filling into the tortillas and fold over one side, making sure to tuck it into the filling while rolling it up. Nestle your baby burrito in the pan seam down, otherwise the guts  spill out when they hang out in the oven. Repeat, laying the baby burritos side by side until the pan is full (think tetris and line them on the side if there is any extra room). Top with another liberal layer salsa verde and a few spoon fulls of filling, then pop in the oven.

Bake for 20-25 minutes. Feel free to bake yourself in this time frame.

top with guacamole and vegan sour cream. Either store bought if you are lazy and have a lot of cash to throw around, or this simple and cost efficient recipe:
