Parmasean Cheeze

One of the things I really miss are cheeses. There are substitutes available at the market, but not only are they sub par, they are pricey as well. Here is a simple recipe for a perfectly suitable Parmesan cheese my Nauna would approve of. It’s also has only 35 calories per tablespoon and 3 grams of power packed protein!

-1 cup nutritional yeast

-1/2 cup raw almonds blanched and patted dry*

-1/2 tsp salt

Place all of the ingredients in a food processor and process for several minutes until the almonds are finely ground. Store in the fridge in a sealed container.

*To blanch almonds simple place them in boiling water and boil for 1-2 minutes. Drain and rinse under cool water. Pinch the skins between your thumb and forefinger at the base of the nut and watch those babies fly off!
