Keen-on-Quinoa Black Bean Burger

“MMMMM MMMMM MMMM, that is a tasty burger!”

 

Who doesn’t love a good burger? If you hate burgers, you probably hate kittens and puppies, too.

 

These burgers are low in fat, high in plant protein and have flavor that even and omnivore can enjoy. In fact, I had an entire table of non-vegetarians going gaga over them! They were also very surprise at how good quinoa is for them.

 

Quinoa is an ancient grain rich in complete proteins, and a much healthier alternative to rice.

 Keen on Quinoa Burgers

 

-2 baked sweet potatoes

-1 cup cooked quiona

-1 can drained black beans

-1/4 cup fresh parsley, chopped

-1 medium onion

-1 T smoked paprika or chipotle

-1 knuckle length chopped ginger

-2 cloves garlic, chopped

-1 T sea salt

-1 T freshly cracked pepper

-1/3 cup oats (blended for coating the patties)

-1 cup oats (quick oats work best)

 

Cook the quinoa and sweet potatoes, chop the sweet potato and set place n blender or food processor. Place all ingredients except the blended oats, in the blender.

 By the way, it’s probably a good idea to grind the oats before you grind up the wet ingredients!

 Blend until it’s just mixed, not liquefied. Favor the “pulse” button to a running blade, as you still want the grainy quinoa and oat texture.

 Once the mixture is done, place in the fridge for 2 hours to let the mixture settle.

 Form into burger size patties and coat generously in the oat mixture.

 Place burgers into a very well oiled pan, I use coconut oil for a delicate flavor (these guys are thirsty, so you may need to re-oil!). I prefer cast iron to create a crispy crust. Cook well on both sides.

 

Serve as you would a burger. Or try it in a lettuce wrap! Perhaps this time you can make it quesadilla style. Maybe just jazz it up with some guacamole, make it your own!

Restaurant Review- Terra Burger- Autsin, Tx

“Fast food doesn’t have to be junk food”

While on my culinary adventures I have never run into a place quite like TerraBurger. I was lucky enough to stumble upon this little gem while strolling through the streets of Austin with the bands The Kominas, Sarmust and all of the tour entourage.

What caught my eye was the small walk up window connected to the kitchen, the European version of the “drive through” and immediately had to take a second look. Upon entering I was greeted by friendly smiles of happy dread-locked employees and a never ending roll of pleasant surprises. I think this was probably my happiest moment on tour.

I was intrigued by the sign the stated “Due to the shortage of locally grown organic potatoes, our french fries will be made from locally grown conventional potatoes until further notice”.  Astonished by the honesty (most places would never bother to mention it) and the assumed standards of both local and organic applied to a fast food joint.

While the vegan options are few, their menu is not complex to begin with. Juicy Veggie burgers, fresh cut fries (both white and sweet potato), soy milk is available to thier full coffee bar, and  some tantalizing vegan baked goods. The crowning glory was my visit to the soda fountain. Not just any soda fountain, but an oasis of cane sugar organic colas, sodas and spritzers.

I was just thrown back by how efficient, yet green the entire operation was. Apparently the owner worked for the “big guys” of fast food for years, and had alot of time to rue over everything wrong with them.

Terra Burger does offer meat for all your omni friends, however, they have very strict standards of using local, organic and free range for all the flesh, along with  separate deep fryers for meat and veggies. Gluten Free buns are also available.

This place is everything I could ever dream of in a fast food restaurant. A bit of a reminder of my time spent in Germany, where people actually cared about the environment. I was able to completely separate all my trash into the well marked containers for glass, paper, plastic and compost. I took a tour of the dual flush toilets (the standard throne  in Europe) and took advantage of the recycled brown toilet paper. A bit, rough, but all in the name of Mother Earth.

This place has a mission statement I can stand behind, and I am elated to hear of a second storefront opening.

Who needs In and Out when there is Terra Burger? 10 out of 10.

Betty’s Black Bean Burgers

Nothing screams Americana like a good ol’ fashion burger. However, being the savy patriot I am, I choose to eat my burgers cruelty free. These burgers are great on the grill, skillet or even spread on pita, popped in the oven and eaten as a “Turkish pizza”. They store in the fridge for about a week and are a great way to incorporate protein into a meal.

-4 cups Black Beans

-3/4 cup spiced bread crumbs (or just add your own basil and oregano, 2 tablespoons each)

-1/2 cup chopped onions

-1/4 cup parsley or cilantro chopped

– 3  garlic cloves peeled and crushed

-2 Tablespoons olive oil

-1 jalapeno

-1 cup cooked oatmeal

Heat a lightly greased skillet or pan (the skillet works best to achieve a nice burnt crust). In food processor blend all ingredients but the beans and oatmeal until well blended. Add the Oats and beans, pulse 7 times and divide mix into patties. Place on a sizzling skillet and grill  for about 4 minutes until a nice crust appears on one side, flip, and cook until the same crust appears on the other side.

Serve with your favorite burger toppings, I chose red onion, dijon mustard, baby spinach and red cabbage. If you’re feeling super sassy, try a drizzling of siracha.
